Fill tortilla shells with a line of cheddar cheese and sprinkle peppers over the cheese. Roll the tortilla shells and lay them side by side in an 8x8 inch baking pan. Cover the enchiladas with sauce and sprinkle with the remaining cheese.
To prepare this meal the night before, roll the tortilla shells and place them in the baking pan. Cover in foil and put in the refrigerator. Leave the sauce off until you are ready to put them in the oven.
